I've got a:

Pentium 4 - 2.6GHz
GeForce FX 5600
512GB RAM

Now, If I got:

GeForce 7900GT
2-3 Gigs of RAM

Would it bottleneck, or is my processor good for the new stuff?

Will it bottleneck bad, like is it worth the upgrade?
Or should I just buy an AMD Athlon 64 4000+?

It would be noticeable. I would definetly recommend you getting only 2 GB of RAM because 3 GB is rather pointless.

You know you will have to upgrade your motherboard, right? Anyway, if I were you, I'd try my best to get the cheapest possible update for now because DirectX 10 cards shall be out on the market by the end of summer.

I don't care, I just want to play oblivion.

P.S. How do you find out your motherboard?

First, they don't make 7900GT in AGP. Only the PCI Express slot.
Second, if you "just want to play oblivion" then I would buy another 512MB memory stick, probably PC3200 DDR400 speed, and a 6800GS AGP card. That should get you up and running easy.

Buying a new CPU and Motherboard would let you jump into the new PCI Express Video card and I would help you to run the game smoother, especially at higher resolutions. Then you could buy that 7900gt and turn up the detail.

What size is your monitor?
If you do end up buying a new CPU/Motherboard just remember that they need to have the same Socket. And 2GB is plenty. Too much memory won't do any good.

Don't forget chances are you will need to upgrade your PSU. Don't skimp on that as it can ruin parts or make things run like crap if it isn't a good PSU.

Ok, ok, ok, I've got $1700 CDN (Roughly $1500 US), what is the best possible everything that I could buy, to run oblivion really good.

this is fairly decent and will let you play at ultra high settings ..I have 7800gt + 3700 and I run Oblivion at ultra high settings

feel free to swap items ..also look at their weekly flyer to get many of theitems listed above on sale, specifically the sound card as you can get the audigy2 zs for $70 cheaper

Well in your case, if would like to upgrade your PC without spending lavishly, you will need a SLI MOBO, CPU, RAM, PSU and a nice GPU and still keep $500.00 for yourself, and recycle all of the components that you now use on your older PC.

Example:

MoBo, RAM, CPU, PSU: http://www.zipzoomfly.com/jsp/ShoppingCart.jsp

GPU:http://www.tigerdirect.com/cgi-bin/ShoppingCart.asp?msg=

All for $1200 US.

Again this is like 5 mnts worth of search but you can take your time and still save more by searching deeper since you're the spender and not me.

Let me know if you need more assistance. I be glad to help.

It all depends on your type of MOBO, whether its gonna bottle-neck or not. 2GB RAM is the highest you can get, anything over that is just over spend. 7900GT does not come on AGP so you will need to upgrade your MOBO, PCIx/SLI MOBOs are the future, in case you like to dual card. AMD is the Gamers CPU of choice and I wouldn't go for Pentium if you intend to be gaming.

Good Luck.
