First of all, the Assassin's Creed game demo shown at E3 was pre-rendered. If you don't know what pre-rendered means, it means it was created on a very powerful computer, and converted to movie format. There is no way of knowing how the actual game will look when you play it until Ubisoft shows gameplay footage.
With that out of the way, now for some good news for 360 owners:
It's all over the web. I can't tell you if it's fact or fiction, but I can say that I think it's highly likely that the game will eventually come to the other systems, particularly the 360, and possibly the PC.
It makes sense that this game would come to 360 and PC when the exclusive time expires for PS3 since Ubisofts' Prince of Persia game came to the other systems.
Besides, it seems the Assassin's Creed project was announced for the Xbox 360 at X05.

From some of the links I found, Sony has paid dearly to keep Assassin's Creed exclusive for a period of time. In fact they are legally bound to decline to comment that it is being worked on for the Xbox 360 as well.
Going by what seems to be a reasonable time frame for exclusives(judging by history), it could be a year or more after Assassin's Creed is released for PS3 before it can be released on the 360.
