I'm planning on doing a whole system overhaul in December when Vista is released, but I would like to keep my computer running fine in the meantime.
Current system specs:
Athlon 64 2800+
1024 MB DDR RAM
Geforce 6800 128 MB (AGP)
VNF3-250 motherboard

What kind of performance boost could I expect from increasing my RAM to 1.5 GB? 2 GB?
Any good, cheap AGP graphics cards that might give me a boost over the 6800? Or should I stick with it until I overhaul my system?

1gb -> 2 gb = + 10 ~ 20 fps on BF2

Stick with your GC, I would say, but wait for the wise ones to arrive.

I'd stay stick with the 6800. PCIe is quickly taking over AGP and you will struggle to find a decent AGP card that is reasonably priced if you just intend on using it until an overhaul.

If you wait a bit longer (around February) then you could try and get a AGP 7800GS. I don't think they'll be many of them so you'll probably be lucky to get one.

If I'd known they were coming out I would've waited a bit longer instead of buying a 6800GS. :(

Budget?

If you meant you wanted to do an upgrade now, I don't see much that could be done, unless you don't mind spending a fair amount and have it wasted soon afterwards because you plan to do another overhaul later this year.

The only thing I'd do is buy faster RAM if you have slower than DDR400.
If you do have DDR400 then it wouldn't hurt to buy another half or full gig.

Aside from that,

i just wouldnt bother

i woulndt change anything right now that should do you find intil then

I have DDR 333, not sure if it supports 400, though it may.
I am adding up what it will probably cost to upgrade later and have I should probably wait on upgrading.

You're thinking pretty far ahead. If you are doing the overhaul in December it only makes sense to see what's available in November and think about it then.
