Computer with no video card?

I'm building a computer for my grandparents, who will just be using it for word processing, internet, the everyday things. Can I build it without a video card. If this is possible, will anything suffer, such as text quality, stuck at 800x600 resolution, or anything like that? Kthxlolbye.

Not all mobos come with onboard video. Be careful.
