FRAPS will let you do it, however, it's not free.
FRAPS is also fully functional straight out of the box, no configuration required, works like a charm.
On the freeware side of things, the only program that I've found to be is reliable is CamStudio. It's a great program, and offers more than just recording .dem files to .avi (you can capture any area on your desktop to .avi).
The only downfall to CamStudio is, it takes alot of trial and error to get capture settings proper, but that's also a plus side, because it's highly customizable.

well, u can convert a .dem into bmp's thenj compile the bmp's into an AVI. this will have a lot better quality than flaps and tbh its just better alltogether 
To do this its simple. type startmovie 30 "Name" and it will start. Then I think its endmovie, or something.

where do you type that? the half life console?
and how do you convert .dem into .bmp? and how do you compile .bmp into avi?
