How do i change playermodel?

I have seen people in other playermodels than combine or rebels, I have seen a crow, a pigeon, breen, gman. All i want to do is be a gman or breen. Or crow...... So can anyone tell me how to do it?

That only happens in certain servers that have custom player models.
