Making file backups of DVDs

I have a bunch of anime DVDs, and for a while I've been trying to figure out how to back them up as video files (AVI, MPEG, etc)... This normally wouldn't be too much of a challange, but I want to do something a bit different. I want 2 layers of audio (Japanese, english), and optional sutitles. I know this can be done, but I'm not sure how. The files I've seen it done with were OGM format.
