I found this very comprehensive review on harddrive performance.
It covers Single, RAID-1 Mirroring (2 drives with one being an exact copy of the first), and RAID-0 Striping (2 drives acting as 1 by splitting the data between them at the same time) performance between several SATA controllers.

Most of the review uses synthetic benchmarks which is a real easy way to show specific results which should give you an idea of how they will perform in real world applications.
Here are a few CPU utilizations tests. File Server, Web Server, Database, and Workstation.

raid zero doesnt improve load times in games for it to be worth the money. Infact it doesnt look like it improves them at all.
 
i definately noticed big speed increases from 1 raptor to dual. in games and programs.
 
It can have an affect depending on which controller you use I suppose. :\

The thing with RAID could be that it has higher latency yet because it is faster perhaps it waits and then staps into action while the single drive begins immediately. hehe
I'm kidding, I'm just throwing stuff out there. IDK

What drive did you have? 36 or 74
They tested the 36GB Raptor drives.
 
i have two 36GB raptors in raid0. on a ic7-max3 mobo, using its sata ports.
