I found this very comprehensive review on harddrive performance.
It covers Single, RAID-1 Mirroring (2 drives with one being an exact copy of the first), and RAID-0 Striping (2 drives acting as 1 by splitting the data between them at the same time) performance between several SATA controllers.
The Tech Report
Most of the review uses synthetic benchmarks which is a real easy way to show specific results which should give you an idea of how they will perform in real world applications.
Here are a few CPU utilizations tests. File Server, Web Server, Database, and Workstation.
The last few pages are real world tests, starting with file creation, read, and copy tests. Link
They use the Business and Multimedia Content Creation Winstone 2004 suites and Divx. Link
They also cover Boot times and UT2004 Demo level load times. Link
