I am looking at upgrading my computer so I can run games better + run a lot more newer games. Currently I am using:

Video: Geforce 7950gt
CPU: AMD 3800+ 2.4Ghz
PSU: 500W
RAM: 2G

I will be getting parts gradually but was looking to see if the new Video card I was looking at would work with my older CPU for the time being while I waited to get my other parts (2-4 weeks)

New Video Card: ATI HD 4850
New CPU: Intel Core 2 Duo E7400
New Mobo: ASUS P5QL Pro

Thanks in advance.

i have a 4850 with a 3200+, so yes it will work!

A new Graphics card will work with an older CPU, only that your graphics card won't run as fast as it could due to bottleneck of the CPU.

Make sure your current mobo has the right pci express slot.

Depends on the game. Lot of games have some kind of multithreading and so do graphic drivers so a single core cpu would be holding framerates back from what you may get with your new CPU. Although if the game just using 1 core then a 2.4GHz AMD will be fine. Of course the intel would still kick its ass even with one core tied behind its back.
