It doesnt need a brain.

The face crab once attached sends down slim lines into the hosts body connecting itsellf to the persons nervous system, the crab then controls the body like it were a puppet.

The body isn't functioning without a brain... the headcrab attatches itself through the head of the host and either connects to the spinal cord or the brain itself to take over control of the body.
In this case the thing functioning as the "brain" is the headcrab.

The big ass ones in Opfor were some of the first headcrabbed but never were killed so the headcrab was able to mutate their bodies farther.

This is how I imagine iw would be: Portal from wherever opens, hundreds or thousands of headcrabs invade the place, take control of everything they can in a selected area and then just kill whatever they find. The deaths and the pure freaking-out caused by the headcrabs would probably soften up the entry zone for the big boys to come in and waste everything left without a high cassualty count.

I wonder if we'll find dogs or other animals with headcrabs.

In OpFor there is a CT scan picture of a zombie.

The skull underneath seems to be intact.

Can't say as much for the flesh though.:x
