First things first. It was ****ing AWESOME. I went around, and tried every game. I'll give you a basis of the games that I liked the most:
Scribblenauts:
Really fun game, didn't get repetitive at all in the demo I played. You literally can write almost anything (even obscure dinosaurs). For example, I had Chthulu fighting Zeus(With a raygun). Zeus won. Then, I went in the Time Machine back in time and killed some dinosaurs with Chthulu. Not much else that I can say besides it was awesome.
Left 4 Dead 2:
REALLY GREAT, although the demo was short (Two levels of Dark Carnival). New weapons, upgrades (laser sight for the weapons), new pistol (Deagle) and the melee weapons are kickass. The demo at PAX was the X360 demo, but it was still fun. I was with a group of people who play competitively and we did fantastically (but it was on normal, so that was expected). Some of the new boss infected are kickass as well. We ran into all of the bosses (Smoker, hunter, charger, spitter, jockey, tank, witch, etc), and they all seemed to have AI that was improved. I did not, however, notice any difference in the AI Director. The Melee weapons (Guitar, Baseball Bat, Katana and Fire Axe) were all a riot to use (all were in the demo). All of them gave a very satisfying crunch per hit.
The Beatles RockBand:
Really fun game, great for groups. 3 vocal tracks can be confusing at times, but overall it's really fun. The songs are classic (all beatles) and and it's a hoot.
Assassins Creed 2 & Splinter Cell: Conviction
These are both in one heading becauase I saw the joint unveiling (lead by ubisoft). Both games look highly polished and really fun. No longer in SC do you have to rely on stealth, you can run&gun the entire game if you so please, and yes, you DO
.
In Assassins creed 2, you play as Ezio, who is badass. The gun on your hidden blade, two hidden blades, and the ability to use any weapon of your attackers is a great feature.
Concerts:
MC FrontALot, Metroid Metal, Anamatagouchi:
Awesome, MC FrontALot was hard to hear, MM was awesome and they rocked, and Anamatagouchi was just hardcore. No other way to explain it.
Jonathon Coulton, Freezepop, Paul&Storm:
All were great, but I liked FP the least. Paul&Storm had some great and hilarious songs (a pirate song where the entire crowd got to yell YARR and ARR a lot), and a Frogger medly. Coulton was amazing, as always, and he put on a great show. At one time, he forgot the lyrics to his song, and he asked the crowd to fill it in, and oh we did. It was amazing. Sadly, however, he did not sing Chiron Beta Prime. He sung Still Alive, and it was amazing. The crowd was so into it. Freezepop (opening act), P&S(second)JC(final). All great acts.

EDIT 2: Also, in the "The Old Republic" Live Demo, they gave everybody in attendance (somewhere near 10,000) a free copy of Knights of the Old Republic 1 on Steam.
