Why are the Big Daddies so determined to protect a little sister?

I noticed that, if you rescue/harvest all of the little sisters in a level, any remaining Big Daddy will wander around looking for a little sister, knocking on all of the holes in the wall where a little sister would normally emerge. So why do Big Daddies need to have a little sister with them all the time?
