Recording Gameplay

OK, people post videos of HL2 online all the time as walkthroughs/demonstrations of techniques/proof of certain accomplishments/whathaveyou. How, exactly, do I create such a thing? Do I need some extra program to record screen/game content, or is there a way to convert "DEM" files into something most programs (and Youtube) can actually use?

You could re-record your .dem with a program such as FRAPS. You have to pay for it though.
