If you somehow would clone yourself, and you would sleep the clone (gender reversed or not). Would it be extreme incest, masturbation or just plain'ol shaking it?

Masturbation is obviously not it, by the very definition. And as for incest, that's just silly as well because you have no family relation to your clone, or at least one hasn't been defined yet. Sex with yourself would be driven by very different motives compared to incest.

The three terms you mentioned is only suitable to be used in sexual reproduction, or at most on sexual reproductive species. Cloning thyself is asexual.

I think it is possible for a man, I mean a person, to have both female and male reproductive organ(it is a kind of illness and requires surgical removal of either one of the organs). If you can grip such a chance and clone yourself then have sex with the clone, you are having sex with your twins brother, or sister. It is theoretically incest.
