AFAIK you still can, after the creature is dead you can drag the corpse around and rip off things etc.

But we'll wait and see at release, but there have been devs who have commented that gore is still in but isn't shown in the movies because of the fact they want to appeal to younger people as well so they have some form of 'kidprotection' on in the videos.
