tutorials on the topic of NPCs

I want to put an NPC into my map.. say a scientist... and when gordon walks into the room I want to have the scientist come to life.. I want him to walk, talk, wave his arms.. the whole 9 yards...

But, I have no clue how to go about doing this.. so I was wondering if any one could give me direct links to tutorials on this... the results I get on google are far away from what I'm looking for.

Any guidence is apprechiated, thank you.
