Cheese is one of my favorite types of food, eating some sort of cheese almost everyday. In fact, I'm eating cheese right now! Oooohhh...the cheddar...

So, what's your favorite all-around type of cheese?

Head Cheese

Head cheese, also called souse and brawn, is a jellied loaf or sausage. Originally it was made entirely from the meaty parts of the head of a pig or calf, but now can include edible parts of the feet, tongue, and heart. The head is cleaned and simmered until the meat falls from the bones, and the liquid is a concentrated gelatinous broth. Strained, the meat is removed from the head, chopped, seasoned and returned to the broth and the whole placed in a mold and chilled until set, so it can be sliced.

Man, it's all about the Swiss...melt a few slices of those on some Ritz crackers with a little slice of ham like a mini-sandwich and you've got a delicious snack that won't put you in the grave like other "good for you" snacks like bacon and skydiving. Recommended by Maui.

I'm a goat's cheese man, myself. Seriously. It's weird because it actually tastes like goats fur and makes me think I'm on a farm or something. What worries me is that I like the taste of goats' fur.
