Freeroam RPG

You have two choices for Ultima VII also, either you run it under a DOS emulator(Ala DOSBox) to experience the original game, or you get EXULT that you can run under windows, it has some modifications that aren't true to the original game however.
 
I found my old Planescape box today while clearing out the spare room - the box, poster/map all pristine :) An hour later and it's all patched with the resolution mod applied - it looks lovely at a high res! As good as the game is, 640*480 really doesn't cut it today. Now it's minty fresh! Go check it out.
 
I bought Fallout 1,2 and tactics the other day havent played them yet but i will soon.
 
Ehh, not exactly a roguelike either. More like an action RPG that takes influence from traditional dungeon crawlers.
 
+1 for Ultima 7

Use exult and don't forget to install the extra sound effect files (you need to download them separately to some music folder). I wouldn't use dosbox for this game.

The game has a huge amount of lore (backstory - be sure to read the manual before you play) and the characters - especially your companions - are very well done. Excellent game, really one of the best RPG's out there, by a huge margin. Enormous world, elaborate cities, roaming galore, you can buy a ship and sail the oceans, use a spellbook, train with trainers, and the story oh the story is marvelous indeed.

They re-did Ultima 5 with the dungeon siege engine, it's called Lazarus, and some guys are also working on an Ultima 6 remake using the same dungeon siege tools which looks like it should be ready sometime later this year. I don't think the order in which you play is really important, I'd start with 7, then 7 part 2 "Serpent Isle", then U5:Lazarus, then the Ultima 6 remake when it's out.

Order is storywise important, since the series has a strong continuity. But, yes, you can read the wonderful documentation and enjoy them in any order.
