Here are two that I like to mess around with on my server:
phys_timescale - If you make it less than "1" it causes barrels and paint cans to move in slow motion.
phys_pushscale - It scales the pushing force of all weapons by the value you set it to. Barrels go flying if you make it greater than 5. It works best when combined with the previous command.
sv_drawbulletimpacts - It shows little red & blue cubes (one color shows the actual location according to the server and the other is where your client guessed the bullet would go) where a bullet hits any object... for the people that complain about not being able to see where the bullets go.
I had about 5 more interesting ones but I forgot. I should have written them down before I quit the game. Anyway, add your favorites to the list!
