how many gargantuas do you meet in the game?

Unlimited. Or 3. Or 4. Depends how you count them.
3: 1st one is in Power Up, supposed to be killed by the power coils.
2nd one is right before Forget About Freeman, you find it in the car park and are supposed to kill it with the air strike.
3rd one is in Xen, it runs through some caves at you - AFAIK you're just supposed to avoid it.

4th - if you get teleported by Nihilanth, the first room you go to has a Garg in it that you can kill.

Unlimited - if you get teleported by Nihilanth 4 or more times, then each time you get teleported to the first room that will have another garg in it.

Should only be 5. 3 in Blast pit and 2 in Interloper in Xen.

Mostly a guess, but I think about 3 or 4. I never use them because they suck.

where do you meet the first alien slave?

In unforseen consequences. You come up to a metal door shortly after seeing the g-man, and it starts getting bashed outwards by a slave that teleports behind it (pounding on it with dents, then it destroys the door and you see it. This is very close to where you first meet houndeyes.

first alien grunt?

Really don't know this one :/ My guess would be in Questionable Ethics when you release two of them from the containment thingies that pop out of the ground when you press a button, not sure though.

how many ichthyosaurs do you meet in the game?

This one is again unlimited as the first area that Nihilanth teleports you to has a couple of them in the water. Think there are 2 there, not sure, I've only ever been to those rooms once (when I first played the game).
Other than that, I can think of 3: 1 at the dam, 1 in the crossbow room (should be the first you see) and 1 in that weird tunnel area that says West on signs with some turrets around and barnacles.
