Map poly count: optimal limits?

I've searched all over for the answer to these questions, but haven't found an answer:

How do you (what console command?) use to display the current poly count/frame rate in game?

And what kind of poly count is deemed 'acceptable' in a HL2:DM or CS:S map?

+showbudget will tell you all you need to know about whats hindering performance.

net_graph 3 will show you framerate and other stuff.
 
In hl1 you just typed
developer 1
r_speeds 1


in console... Dunno about hl2
