I got this game as a gift for fixing someone's computer. I played the demo and I really enjoyed the gameplay.
I am going to run down some things I liked and disliked so far:

All in all, my rating is 4/5 stars. I think it's well worth the buy, I've been playing it for about 2-3 weeks and I'm not done yet. Make that longer if you like higher difficulty.

Pros
- Excellent gameplay. I really like sneaking around, stealing stuff, blackjacking people, and stabbing people.
- Humor. There's lots of humor, it's mostly citizens and guards. "Hey, where'd my pack go? Oh no! I've been robbed!" *runs around*
- Decent A.I. I play on Easy, so I can't comment on Expert A.I. Easy is what it is, it's easy. *stabs someone, guard comes up to the body, "Hey, he's been murdered!" Guard proceeds to search for 30 seconds. "Oh well."*
- Storyline. OK, this was not a biggie at the beginning, I honestly went in with the thought that the storyline would be mediocre at best. Well, I don't know how far I am into the game, but the storyline is the best part. Excellent plot twist, insanely creepy missions and characters. The cutscenes are creepy too. I love it.
- Suspense. I usually don't play scary games, but Thief 3 is the exception, I really like it and it truly creeps me out, especially the mission I'm on now. Excellent sound effects, great atmosphere.
- Sound. Really one of the best features, great sound and voice.
Cons
- Shadow problems. This can be fixed by using Catalyst 4.4 and downloading the improved lighting mod. It looks realistic now.
- Graphics are not what they could have been. Since the game is dark, you probably won't notice too much the quality of the textures but since I make it a bit brighter, I notice it. But since gameplay is so fun, I don't care.
- More killing weapons. I need something more than a dagger. It'd also be nice to pick up weapons.
- Ragdolling sucks. It is pretty hilarious though, after you kill someone they bend their knees and lay back, it's funny.
- Limited physics. There are physics but only for certain pick-up-able objects. Though if you throw something at someone they don't get hurt.
