Here are three i know of and what they do:

CL_LOW_VIOLENCE 1

Makes people get down on there knees and surrender when you shoot them. Really funny.

CL_RAGDOLL_COLLIDE 1 (Most common command)

Lets dead bodies fall on each other instead of through each other!

MP_DECALS 4096

More decals! More Blood! More Bullet holes!!!!
