Looking at those cut weapons, the only ones that look at all interesting are the combine guard gun and the hopwire. The guard gun because it's an alternte way to take down a strider, and the hopwire because it's a very cool tripmine variant. and it ties in with the snark bombs at the end of HL1.
Everything else is just unecessary. The game really didn't need six rifles, five grenade variants and three nearly identical melee weapons.
Looking at that list has pretty much convinced me that Valve's policy of perfecting a few things instead of jamming a lot of stuff in and hoping for the best was the right way to go.
