I heard that if I unpack my .GCF files for Half-Life 2 and Counter-Strike: Source that I would get a better performance with the game. But one question, how do I do this? I know I have to use an unpacked, namely GFScape which I have, but where do I put the files once they're unpacked? Any help or point me to an article would be a great help.

Did that with doom3 and it did work indeed.
Wouldt do it with hl2 because of steamupdates!!!

The only possible performance benefit may be slightly faster level load times if anything at all. I wouln't bother.
