Cracker, Barenaked Ladies, Blink 182, really anything that isn't the more heavier rock like AC/DC kind of stuff.
 
I find acoustic music accompanied by a nice voice to be soothing.
 
Jeff Buckley, Lou Reed, Pink Floyd, Beta Band, Santana

Bunch of other bands as well, but those are the usual suspects
 
Mum is also good chill out music. More of their earlier stuff. They're (unfortunately) going through a sound change with the loss of the lead singer.
 
Zero 7, Explosions In The Sky are the usual choices.

Armin Van Buuren Ft Nadia Ali - Who Is Watching. Absolutely awesome vocals and great acoustic guitar use with a slow trance in the background.

Dido - anything by her is chilled. Its aso the ultimate dinner music when you have a bunch of adults around wanting a relaxed evening.
Stoned is my favourite song by Dido. It has a good beat but its euphoric because of her incredibly relaxing voice.

I really like that song too. Haven't listened to Dido in a very long time though. I remember listening to some of the songs off her latest album but they were a little too chill for me.
 
My chill out music is anything by Joe Hisaishi, who composed the music for such films as Spirited Away, Princess Mononoke, My Neighbour Totoro and Howl's Moving Castle. In fact, I think he did the music for all the Miyazaki films.
 
i agree pink floyd is a classic, but if you want really good chill music, check out 1200 micrograms....they've got the best shit, and Shpongle.
