Then if the combine are human, then what is the deal with that big blob of flesh that Dr. Breen talks to through the TV (I think it's called a combine advisor)? Is that some sort of human or something or what?
No, the humanoid enemies we meet in HL2 are all human (or ex-human, or 'transhuman' perhaps). However, Kevin is right, they are just one branch of a many-faceted interdimensional army; an army which is also composed of striders, gunships, dropships, hunters, crab synths, mortar synths, and (we should assume) portantially lots of others which we have not seen and might not ever see.Many different species that have the same human form?

The Combine have the ability to evolve every species they encounter through the force of their own technology. Essentially, Earth in Half-life 2 is undergoing a kind of transformation period; humanity is being absorbed into the Combine war machine, the planet being transformed into an outpost of kinds. The people in the cities are being gradually taken from Earth; transformed into Stalkers - an immortal life of servitude - to be put to use elsewhere. Humanity's suitability as part of the Combine is being put to the test. (I think the end of HL2 is supposed to mark the failure of that, since we don't defeat the Combine, we defeat the Overwatch).
Why arnt they? They are making forced evolution with a machine.
