Among others, I'd have to say:

Natural Born Killers
A Clockwork Orange
Adaptation
Boogie Nights
Magnolia
Pulp Fiction
and The Royal Tenanbaums

Full Metal Jacket
Saving Private Ryan
Fellowship of the Ring (I guess I found it pretty cool)
Dawn of the Dead remake
28 Days Later (the monkeys and walking through London deserted)

Of course, these are all assuming it's the opening scenes, not just one scene at the very beginning.

The Truman Show
28 Days Later
Alien
Dawn of the Dead remake
Raiders of the Lost Ark
Pulp Fiction
Saving Private Ryan
(and now) Children of Men

Saving Private Ryan
Pretty much all of the Star Warses
Braveheart(mainly for the music and beautiful scenery)
Pulp Fiction
Indiana Jones and the Last Crusade
There's Something About Mary
The Last of the Mohicans

The battle on the slopes of Mount Doom in LOTR: The Fellowship really got to me. The Elfs cutting down hundreds of orcs with the arrows then completly obliterating the frontline of the attackers with that synchronized sword attack really made me smile

Also;

Saving Private Ryan
Enemy at the Gates
Goldeneye (Tomorrow Never Dies had a ****ing brilliant intro, too. In fact, I'm going to watch it later methinks.)

eh, can't think of anything right now, but they stick out.

The Big Lebowski - The voice-over guy and the intro to The Dude signing a cheque for 59 cents or something.

L.A Confidential
Lost in Translation.
LOTR: Fellowship of the ring

Saving Private Ryan
Full Metal Jacket
The Thin Red Line

LOTR: Fellowship of the Ring (God i'd love to live in hobbiton :D)
Saving Private Ryan
Goldeneye
Dawn of the Dead Remake
Alien

Besides movies people have already mentioned -

History of Violence

I love how that whole bit was all one take.

Fight Club

The Mask of Zorro
Goldeneye
Die Another Day
Tommorow Never Dies (definately agree with antipop, was a cracking intro)
Predator 2
Pulp Fiction
LOTR: FOTR
Saving Private Ryan
Enemy at the Gates
Star Wars: Episodes 4 and 6
We Were Soldiers (the French getting owned!)

All I can think of at the moment, see A LOT of films

Saving Private Ryan.

Probably the best part of the film :p

The only ones I can think of that haven't already been said are Reservoir Dogs and Ferris Bueller's Day Off.

J_Tweedy ma man you got here before me Blade as well. Nothing cant stop that man at the start !

just a thought

res dogs
saving private ryan
cube
saw
apocolypse now
falling down
ace ventura pet detective

Gah...how'd I forget Apocalypse Now? Yeah, add that to my list.

Twin Peaks: Fire Walk With Me (Just static on a TV with soft jazz playing in the background interrupted by a woman clubbed to death)

Saving Private Ryan ('Nuff said)

Lord of War (Following a bullet's journey from a factory straight to a boy's head)

Batman (The main theme takes all the credit here)

Terminator 2 (Ditto the above)

Dawn of the Dead remake (Come on, it's ****ing Johnny Cash playing to a zombie apocalypse)

The opening to Fellowship of the Rings - 'Concerning Hobbits'. The first handful of scenes are exactly what i'd seen in my mind's eye when reading the books all those years ago.

(i've watched the beginging of this movie 50+ times. Sad, I know)

I'd have to say Kill Bill Vol. 1 sticks out in my mind the most. Opening up in black and white with a battered and bloody bride, some great dialogue, ending with "Bill ... it's your baby" and a loud gunshot followed by blood spraying out the side of her head, then come the cool credits and "My baby shot me down" playing in the background.

Another favorite of mine is in 25th Hour when Monty stops to save the dying dog, great opening to one of my favorite movies.

2001: A Space Odyssey had an absolutely fascinating opening scene.

Also, a lot of the movies already mentioned would be on this list. That's all I can think of right now.

Gladiator
LotR: FotR
Saving Private Ryan

anything with a well done epic battle at the start :p

Conan the Barbarian.

The riddle of steel, the assault on his village, etc--great great stuff.

The most recent one that impressed me was Lord of War. Great music and a great concept for the shot.

Cant believe noone has mentioned Lost in Translation... an opening credits of Scarlett Johansson's rather beautiful arse! win!

See: Samon.

Also see: Me calling him a perv.

And that was a butt-double, I think...

The Fog (John Carpenter Original), nothings better than starting with a ghost story

I actually totally forgot about her ass. I was more or less thinking about Murray waking up in the car and staring out the window. Thought it really set the mood. But yeah, her ass definately adds to it now you mention it. :p

Unbreakable
The Matrix
Indiana Jones and the Raiders of the Ark
Profondo Rosso

I figured, I just felt like taking a jab at you :D.

But yeah, that IS a great scene (the car, that is).

Indiana Jones and the Raiders of the Ark

Ah :) That's what I was trying to think of. It won 'best begining to a movie ever' at some random award ceremony - well deserved too.

Oh damn, Scarlett Johanson shows her badonkadonk?

Now I actually want to see Lost in Translation.

The first minute or so you see her in her underwear, but you can see her ass pretty clearly.

Lost in Translation is an amazing film though, I highly recommend it.

Shaun of the Dead-(When Shaun just walks out of his apartment with zombies roaming the streets, without noticing. Funny.)
2001: A Space Odyssey
Godzilla-(1954)
The Thing-(The white, expansive Antarctic landscape looked nice, and the Norwegians chasing the huskie and then crashing the helicopter. They got ****ed right up.)
Jackass: Number 2-(Running of the bulls through a neighborhood. Love it.)
Saving Private Ryan
