I've just finished reading Star Wars III: Revenge of the Sith, by Matthew Stover, and am quite confident that I can answer your questions

It was an awesome book, and the movie looks to be good.

The book is based on the screenplay, so I believe that it is relatively accurate.

And does it accurately describe Kashyyyk? ie : Extremely high in the treetops, and there's dangerous creatures on the bottom.

The book makes no mention of Kashyyyk, with the exception of Yoda travelling there to make the Jedi Order appear very thin. The book mainly focuses around Anakin and Obi-Wan.

However, I did purchase the visual dictionary, and that has many mentions of Kashyyyk and it's Chief, Tarful

Yes... Grevious is part alien, part droid, so he has internal organs. Obi-Wan loses his lightsaber, so he uses Grevious' energy sword to smash in his armor plating, then shoots his unguarded body organs with a blaster. So yes.

Doesn't really have any....fluidity. All seems strung together in Lucas' haste to tie up all plots within two hours. He manages to make everything lead nicely to episode 4 though. Apart from some parts, which aren't very well explained, but if I mention them, I will spoil the story.
